I really like the theme song and musical setting of Firefly. I’m not as hyped about the story now as I once was, but the music is still great.
Utopia (the original british series) has a fucking amazing score.
RWBY has an absolutely beastly original soundtrack
The first season of American Horror Story.
Battlestar Galactica! All of the themes for the various characters fit really well, and the taiko-style drums during space battles, which at first might seem stylistically a bit strange, work amazingly well to amp up the sense of urgency.
Utopia Highly recommended!!!
Twin Peaks. Lots of mood. The revival had several musical guests, too.
The opening theme of Succession is legendary
Mr. ROBOT and Westworld have some amazing scores aside from the cover versions they provide.
The various versions of paint it black are fucking fantastic.

Really fit the series, too which, while not being short of wit and action, always had a seriously melancholy undercurrent.

I always listen through the Adventure Time ending. The only thing that ruins it is the production company messages at the end that cut the song off abrubtly.

RWBY’s OST has no business being as good as it is.

Also a mention for One Punch Man OST, specifically Genos’s theme, my man looks like a total badass and his theme really complements the fights right up until he lets his guard down and gets flattened every fucking time.

It wasn’t a great show but the anime Kubikiri Cycle had a very interesting soundtrack, composed by Yuki Kajiura. Some examples:

Old-fashioned Fairy Tale (this one features her own language)
I like shows that consequently and (almost) exclusively use actual songs made by real* artists. I remember Orange Is The New Black doing this. And The Wire. Russian Doll. Borat. The list is long.
I prefer shows that do not have a constant mood-setting musical soundtrack.
* a little debatable if their only known the track is the one from the show
