    I always though that the flavour compounds get oxidized in stale coffee, hence the taste. Also, wouldn’t offgassing occur in vacuum packed coffee as well? There’s got to be many VOC-s in coffee that can escape though, so I don’t know.

      How? Sealed container wouldn’t release it to the environment.

      Off gassing is escaping from the liquid coffee into the environment. If you have bought a sealed coffee in vacuum, it’s sealed! If you open the seal and walk away for a day to allow the off gassing…

        So, it has to get in contact with air then? Wouldn’t that be a different phenomenon? I mean if coffee would just be releasing gasses on it’s own, wouldn’t the pack be puffy after a while? Keep in mind, I’m dull and thick as a brick.
