I dont use attribution normally but at some level of quality there should be one.

About Fairphone: there is an alternative (Shiftphone) that is more expensive but with the main plus points of having a higher storage option and the mainboard is replaceable, they also have somewhere a cheap (~200€) phone that should work if you really just need a phone
(i mention that as an option, because having choice is always better even if it ends up being the first thing that gets choosen)

CasaOS is not an operating system and more like a GUI for Docker with access to the terminal via said GUI (at least thats how i used it)
I personally think thats a very good option if you simply want to use an old PC to host stuff and test around but its limited in its scope so if you want things like RAID you need other or additional solutions
TrueNAS is an operating system Might be overkill for a newbie and i think it was ressource intensive but offers a lot of features in return like RAID

If you play games with a kernel Anticheat like Valo you have to consider running a Windows VM or to look for an alternative. If booth options are not acceptible for you then :/
