In my opinion, the Google Pixel with GrapheneOS is considered the gold standard in terms of security and privacy. While I am not fully knowledgeable about its capabilities, it offers a comprehensive suite of security features.
The iPhone is also a viable option. You can easily swap between iCloud to a more secure encrypted provider for both cloud storage and photo backups. Additionally, any notes application can be replaced with a more secure alternative.
Samsung phones can support a range of operating system images that can be flashed, including LineageOS. However, I am not fully aware of all the available options.

Not a terrible idea, at least company xyz won’t see what you bought from the other company’s and therefore prevents them sharing much of your data to Ad services.

Depends what they are, I think a fair amount of people might be in the same boat, with a few services from different tiers.
I agree that Apple, while not entirely private, is still a decent choice compared to Android. They both have their flaws though.
I suppose the legal part could stand, if they share or dispose of your Resume in an inappropriate manner in the EU or uk you could pull up GDPR or DPA and claim your information wasn’t protected
I use Adguard premium i think that’ll work come to think of it, it’s a shame really that YouTube had to go to such lengths to try and stop people from not paying them to rid their site of ads
Anything been heard about what users with ADP enabled should do? I’ve heard that people may loose their iCloud account if they don’t turn it off with in a set period but I haven’t heard anything about a set period from Apple

Whilst I’ll agree with your statement some people prefer a service to use rather than self hosted.
And I suppose some people may worry about electric usage as well when running hardware 24/7. I guess that’s just 1 reason.
