If you stay regional, seasonal and somewhat on the boring side, veggies are incredibly cheap. Get a sack of potatoes, onions and carrots and you have a lot you can work with for relatively cheap.

Cook as if feeding an army. Freeze extra servings if you can. Saves me a lot of time both in cooking and the cleaning.
