Like Google Docs, also with permissions for Owner, Editor and Viewer, and can be linked. I know making websites exist but I’m not sure if I could access buying any relevant hardware in my city and idk how to self-host.
CryptPad is a lot like Google Docs.
But if you just want collaborative text editing, then EtherPad has been around since forever. There’s also a hosted instance available at https://framapad.org/ .

Cryptpad is really good for ad hoc collaborative text editing, with a couple bonuses:
- the server cannot see what you and your friends are writing
- you don’t need an account to participate in creating or editing a document

The end-to-end encryption is so nice
I use Cryptpad as wel. Its been around quite a while and they have been expanding with an lot of new apps like kanban, drawings, code editors and presentations. All Foss and e2e encrypted.
I think Proton has something like that as far as I’m aware. It’s basic, though.
